Mini Meatloaf Muffins Recipe

Ingredients

  • 1 ½ lbs. ground beef
  • ½ cup chopped onion
  • ½ cup chopped bell pepper
  • 2 tsp Worcestershire sauce
  • 2 Tbsp chopped fresh parsley
  • 1 tsp Dijon mustard
  • ¼ cup BBQ sauce
  • ⅔ cup bread crumbs
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 large egg
  • Salt and pepper to taste

For the Glaze

  • ¼ cup BBQ sauce
  • ¼ cup ketchup
  • 1 Tbsp honey

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine all the ingredients for the meatloaf. Use your hands to mix everything thoroughly until well incorporated.
  3. Grease a muffin tin, then divide the meat mixture evenly into 10 sections and press each portion firmly into the cups.
  4. In a small bowl, mix together the ingredients for the glaze (BBQ sauce, ketchup, and honey).
  5. Spoon a bit of the glaze on top of each mini meatloaf.
  6. Bake for 25 minutes, or until the meatloaves are browned and cooked through.
  7. Let them cool slightly before serving. Enjoy your mini meatloaf muffins as a fun, delicious main course!
