Mini Meatloaf Muffins Recipe
Ingredients
- 1 ½ lbs. ground beef
- ½ cup chopped onion
- ½ cup chopped bell pepper
- 2 tsp Worcestershire sauce
- 2 Tbsp chopped fresh parsley
- 1 tsp Dijon mustard
- ¼ cup BBQ sauce
- ⅔ cup bread crumbs
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1 large egg
- Salt and pepper to taste
For the Glaze
- ¼ cup BBQ sauce
- ¼ cup ketchup
- 1 Tbsp honey
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine all the ingredients for the meatloaf. Use your hands to mix everything thoroughly until well incorporated.
- Grease a muffin tin, then divide the meat mixture evenly into 10 sections and press each portion firmly into the cups.
- In a small bowl, mix together the ingredients for the glaze (BBQ sauce, ketchup, and honey).
- Spoon a bit of the glaze on top of each mini meatloaf.
- Bake for 25 minutes, or until the meatloaves are browned and cooked through.
- Let them cool slightly before serving. Enjoy your mini meatloaf muffins as a fun, delicious main course!
