Mozzarella-Stuffed Soft Pretzels

Mozzarella-Stuffed Soft Pretzels

Ingredients:

  • 1 1/2 cups warm water
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1 tablespoon sugar
  • 4 cups all-purpose flour
  • 2 teaspoons salt
  • 1/4 cup unsalted butter, melted
  • 8 ounces mozzarella cheese, cut into sticks
  • 10 cups water
  • 2/3 cup baking soda
  • 1 egg yolk, beaten with 1 tablespoon water
  • Coarse salt, for sprinkling

Directions:

  1. In a large bowl, combine the warm water, yeast, and sugar. Allow the mixture to sit for 5 minutes until it becomes frothy.
  2. Incorporate the flour, salt, and melted butter into the yeast mixture. Stir until well combined.
  3. Transfer the dough to a floured surface and knead for 5-7 minutes, or until smooth and elastic.
  4. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.
  5. In a large pot, bring 10 cups of water to a boil. Stir in the baking soda.
  6. Divide the dough into 12 equal portions. Flatten each portion and place a mozzarella stick in the center. Fold the dough over the cheese and roll into a pretzel shape.
  7. Carefully drop each pretzel into the boiling water for 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet.
  8. Brush each pretzel with the egg yolk mixture and sprinkle with coarse salt.
  9. Bake for 12-15 minutes, or until golden brown. Let cool slightly before serving.
