Ingredients:

For the Crust:

  • 2 cups Graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Cheesecake Topping:

  • 2 cups heavy cream
  • 16 ounces (2 packages) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Optional Topping:

  • 1/2 cup Graham cracker crumbs (optional)
  • 1 tablespoon powdered sugar (optional)

Instructions:

1. Prepare the Crust:

In a medium-sized bowl, combine the Graham cracker crumbs, melted butter, and granulated sugar. Stir until the crumbs are fully coated in butter.

Press the mixture firmly into the bottom of a 9×13-inch rectangular dish to form an even crust. Use the back of a spoon or a flat-bottomed glass to compact the crust.

Place the crust in the refrigerator to set while you prepare the cheesecake filling.

2. Prepare the Cheesecake Topping:

In a large bowl, whip the heavy cream until stiff peaks form. Set aside.

In a separate bowl, beat the softened cream cheese until smooth and creamy.

Gradually add the powdered sugar, vanilla extract, and lemon juice to the cream cheese, beating until well combined and smooth.

Gently fold the whipped cream into the cream cheese mixture until fully incorporated, being careful to maintain a light and airy texture.

4. Add Optional Toppings:

If desired, mix the Graham cracker crumbs with powdered sugar and sprinkle evenly over the top of the chilled cheesecake.

5. Serve:

Once the cheesecake is fully set, cut it into bars and serve chilled.
