Instructions

  1. Prepare the crust: In a large bowl, combine flour and salt. Cut in butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough holds together. Divide dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
  2. Prepare the filling: In a large bowl, mix sliced apples with sugars, cinnamon, nutmeg, lemon juice, and flour. Toss until evenly coated.
  3. Assemble the pie: Preheat oven to 425°F (220°C). Roll out one disk of dough on a lightly floured surface to fit a 9-inch pie dish. Transfer dough to the dish and trim excess edges. Pour the apple filling into the crust and dot with butter pieces. Roll out the second disk for the top crust. Cover the pie, trim excess dough, and crimp edges to seal. Cut slits on the top crust to allow steam to escape. Brush with beaten egg and sprinkle sugar on top.
  4. Bake the pie: Bake at 425°F (220°C) for 15 minutes. Reduce temperature to 350°F (175°C) and bake for 40–50 minutes, until the crust is golden and the filling is bubbling. Let the pie cool for at least 2 hours before serving.
