Ingredients

  • 8 whole chicken thighs (with skin and bone in)
  • 1 lb baby red potatoes
  • 1 bag baby carrots (16 oz)
  • 1 pound green beans, cleaned and trimmed
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 1 tablespoon lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon pepper

Directions

  1. Prepare the Marinade:

    In a medium bowl, combine the honey, soy sauce, lemon juice, minced garlic, dried basil, dried oregano, red pepper flakes, and pepper. Mix well to ensure all the ingredients are evenly incorporated.

  2. Arrange the Ingredients:

    Place the chicken thighs at the bottom of a slow cooker. Layer the baby red potatoes, baby carrots, and green beans on top of the chicken.

  3. Add the Marinade:

    Pour the prepared honey garlic marinade over the chicken and vegetables, ensuring everything is well-coated.

  4. Cook:

    Cover the slow cooker and cook on low heat for 8 hours, or until the chicken is tender and fully cooked through.

  5. Serve:

    Once done, carefully remove the chicken and vegetables from the slow cooker. Serve hot, ensuring each plate gets a generous portion of chicken, potatoes, carrots, and green beans, drizzled with the flavorful sauce from the slow cooker.
