Ingredients:

  • 6 bratwursts
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 (12-ounce) bottle of beer (pilsner or lager recommended)
  • 1 cup beef broth
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional for garnish)

Directions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large oven-safe skillet or Dutch oven, heat the olive oil and butter over medium heat.
  3. Add the sliced onions and cook, stirring occasionally, until they are soft and golden brown, approximately 20-25 minutes. This slow caramelization process enhances the natural sweetness of the onions.
  4. Stir in the minced garlic and cook for an additional 2-3 minutes until fragrant.
  5. Nestle the bratwursts among the onions.
  6. Pour the beer and beef broth into the skillet, ensuring the bratwursts are mostly submerged in the liquid. Stir in the Dijon mustard, and season with salt and pepper to taste.
  7. Bring the mixture to a simmer on the stovetop, then transfer the skillet to the preheated oven.
  8. Bake, uncovered, for 30-40 minutes, or until the bratwursts are fully cooked and have absorbed the rich flavors of the braising liquid.
  9. If desired, garnish with chopped fresh parsley before serving.
