Ingredients

For the Paleo “Cornbread”

  • 1 cup almond flour
  • ¼ cup coconut flour
  • 1 tablespoon arrowroot starch (optional)
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 4 large eggs
  • 3 tablespoons melted coconut oil or ghee
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon apple cider vinegar

For the Dressing

  • 2 tablespoons ghee or olive oil
  • 1 medium onion, diced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon poultry seasoning
  • 1 teaspoon dried sage
  • ½ teaspoon dried thyme
  • Salt and pepper, to taste
  • 1½–2 cups chicken or turkey broth
  • 2 eggs, lightly beaten
  • Fresh parsley for garnish (optional)

Instructions

Step 1: Make the Paleo Cornbread

  1. Preheat oven to 350°F (175°C).
  2. Line an 8×8 pan with parchment or lightly grease it.
  3. Mix almond flour, coconut flour, arrowroot, baking soda, and salt in a bowl.
  4. In another bowl, whisk eggs, melted oil/ghee, honey, and apple cider vinegar.
  5. Combine wet and dry ingredients until smooth.
  6. Pour into the baking pan and bake for 20–25 minutes until golden.
  7. Cool completely, then crumble into medium pieces.

Step 2: Prepare the Dressing Mixture

  1. Heat ghee or olive oil in a skillet.
  2. Sauté onion and celery for about 8 minutes until soft.
  3. Add garlic and cook for 1 minute.
  4. Stir in sage, thyme, poultry seasoning, salt, and pepper.
  5. Transfer mixture to a large bowl and add crumbled paleo cornbread.
  6. Add 1½ cups broth and the beaten eggs.
  7. Mix gently. Add more broth if needed.

Step 3: Bake the Dressing

  1. Preheat oven to 375°F (190°C).
  2. Spread mixture evenly in a greased baking dish.
  3. Bake for 30–40 minutes until golden and set.
  4. Let cool for 10 minutes before serving.
