Ingredients
For the Paleo “Cornbread”
- 1 cup almond flour
- ¼ cup coconut flour
- 1 tablespoon arrowroot starch (optional)
- ½ teaspoon baking soda
- ½ teaspoon salt
- 4 large eggs
- 3 tablespoons melted coconut oil or ghee
- 2 tablespoons honey or maple syrup
- 1 tablespoon apple cider vinegar
For the Dressing
- 2 tablespoons ghee or olive oil
- 1 medium onion, diced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon poultry seasoning
- 1 teaspoon dried sage
- ½ teaspoon dried thyme
- Salt and pepper, to taste
- 1½–2 cups chicken or turkey broth
- 2 eggs, lightly beaten

Instructions
Step 1: Make the Paleo Cornbread
- Preheat oven to 350°F (175°C).
- Line an 8×8 pan with parchment or lightly grease it.
- Mix almond flour, coconut flour, arrowroot, baking soda, and salt in a bowl.
- In another bowl, whisk eggs, melted oil/ghee, honey, and apple cider vinegar.
- Combine wet and dry ingredients until smooth.
- Pour into the baking pan and bake for 20–25 minutes until golden.
- Cool completely, then crumble into medium pieces.
Step 2: Prepare the Dressing Mixture
- Heat ghee or olive oil in a skillet.
- Sauté onion and celery for about 8 minutes until soft.
- Add garlic and cook for 1 minute.
- Stir in sage, thyme, poultry seasoning, salt, and pepper.
- Transfer mixture to a large bowl and add crumbled paleo cornbread.
- Add 1½ cups broth and the beaten eggs.
- Mix gently. Add more broth if needed.
Step 3: Bake the Dressing
- Preheat oven to 375°F (190°C).
- Spread mixture evenly in a greased baking dish.
- Bake for 30–40 minutes until golden and set.
