Peach Cinnamon Rolls with Vanilla Glaze

Ingredients

For the Dough:

  • 3 1/4 cups (405g) all-purpose flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/4 cup (50g) granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup (120ml) milk
  • 1/4 cup (60ml) water
  • 1/4 cup (60g) unsalted butter
  • 1 large egg

For the Filling:

  • 1/4 cup (60g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar
  • 2 teaspoons ground cinnamon
  • 1 1/2 cups fresh peaches, peeled and diced (approximately 2-3 peaches)

For the Glaze:

  • 1 cup (120g) powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

Preparing the Dough:

  1. In a large mixing bowl, combine 2 cups of flour, the yeast, sugar, and salt.
  2. In a small saucepan, gently heat the milk, water, and butter until the butter melts. Ensure the mixture is warm but not hot.
  3. Pour the warmed milk mixture into the flour mixture and stir until just combined.
  4. Add the egg and beat the mixture until it is smooth.
  5. Gradually incorporate the remaining flour until a soft dough forms.
  6. Knead the dough on a lightly floured surface for 5-7 minutes, until it becomes smooth and elastic.
  7. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about an hour, or until it has doubled in size.

Preparing the Filling:

  1. In a small bowl, mix together the brown sugar and ground cinnamon.
  2. Roll the risen dough into a 15×9 inch rectangle.
  3. Evenly spread the softened butter over the dough.
  4. Sprinkle the cinnamon-sugar mixture over the butter.
  5. Evenly distribute the diced peaches over the cinnamon-sugar layer.

Assembling the Rolls:

  1. Starting from the long edge, roll the dough tightly into a log.
  2. Cut the log into 12 equal slices and arrange them in a greased 9×13 inch baking dish.

Second Rise:

  1. Cover the rolls with a cloth and allow them to rise in a warm place for another 30-45 minutes, or until they have nearly doubled in size.

Baking:

  1. Preheat your oven to 375°F (190°C).
  2. Bake the rolls for 20-25 minutes, or until they are golden brown.

Preparing the Glaze:

  1. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until the glaze is smooth and pourable.
  2. Drizzle the glaze over the warm rolls.
