Peanut Butter Crunch Bars
I made these Peanut Butter Crunch Bars for a potluck, and they were such a hit that I barely had a chance to bring any home! The combination of peanut butter, chocolate, and butterscotch makes for a deliciously irresistible treat. Here’s how you can make them:
Ingredients:
- ½ cup semisweet chocolate chips
- 1 ½ cups peanut butter
- 1 cup white sugar
- 1 cup light corn syrup
- 6 cups crisp rice cereal
- 1 tablespoon unsalted butter (or as needed)
- ½ cup butterscotch chips
Directions:
- Prepare the Pan: Start by generously greasing a 9×13-inch baking pan with butter. This will make it much easier to remove the bars later on. Set the pan aside.
- Heat the Peanut Butter Mixture: In a large pot, combine the peanut butter, corn syrup, and sugar. Heat over medium flame, stirring until the peanut butter has fully melted and all ingredients are well blended. Allow the mixture to come to a boil, then remove it from the heat.
- Combine with Cereal: Gently fold the crisp rice cereal into the peanut butter mixture until evenly combined. Pour the mixture into the prepared baking pan. Use buttered hands to press it down firmly and evenly.
- Melt the Chips: In a medium saucepan, combine the semisweet chocolate chips and butterscotch chips. Heat over medium-low heat, stirring until the chips are fully melted and smooth. Spread this melted mixture evenly over the cereal layer in the pan.
- Cool and Slice: Allow the bars to cool at room temperature for about 20 minutes, or until fully set. Once cooled, slice into 24 squares for serving.
