  • 1/4 cup brown sugar, packed
  • 1/4 cup corn syrup or maple syrup
  • 1 tbsp unsalted butter, melted
  • 1/2 cup chopped pecans
  • 1/4 tsp vanilla extract

Directions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make the Cookie Dough:
    • Cream the softened butter and granulated sugar until light and fluffy.
    • Add the egg yolk and vanilla extract, mixing until combined.
    • Gradually mix in the flour and salt until a soft dough forms.
  3. Shape the Cookies:
    • Roll about 1 tablespoon of dough into a ball and place it on the baking sheet.
    • Space the cookies 2 inches apart and make a small indentation in the center of each using your thumb or a spoon.
  4. Prepare the Pecan Filling:
    • Mix the brown sugar, corn syrup (or maple syrup), melted butter, chopped pecans, and vanilla extract in a small bowl.
  5. Fill the Cookies: Spoon about 1/2 teaspoon of the pecan filling into the indentation of each cookie.
  6. Bake:
    • Bake the cookies for 10–12 minutes or until the edges are lightly golden.
    • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
