Introduction

Ingredients

  • 2 cups light brown sugar, firmly packed
  • ½ cup whole milk
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans or walnuts (optional)
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine the brown sugar, milk, butter, and salt.
  2. Cook over medium heat, stirring constantly, until the mixture reaches a gentle boil.
  3. Stop stirring and allow the mixture to boil until it reaches 234–236°F (soft-ball stage).
  4. Remove from heat and let cool undisturbed for 10–15 minutes.
  5. Add the vanilla extract and beat vigorously until the mixture thickens and loses its glossy sheen.
  6. Fold in nuts if using.
  7. Quickly spread the fudge into a buttered or parchment-lined pan.
  8. Allow it to set at room temperature, then cut into squares.
