Ingredients
For the Crust and Topping:
- Pinch of salt
- 1 ½ cups all-purpose flour
- ¾ cup cold butter, cubed
- ½ cup sugar
For the Filling:

- ½ cup all-purpose flour
- 1 cup sugar
- 16 oz can crushed pineapple, drained
- ½ cup sour cream
For the Icing:
- 1 teaspoon coconut extract
- 1 cup powdered sugar
- 2 tablespoons half-and-half
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Prepare the Crust:
- In a mixing bowl, combine the flour, sugar, and a pinch of salt.
- Add the cold, cubed butter and mix until the texture is crumbly.
- Reserve 1 cup of this mixture for the topping.
- Press the remaining mixture evenly into the bottom of a greased 9×13-inch baking dish.
- Bake for 15 minutes or until lightly golden.
- Make the Filling:
- In a separate bowl, whisk together eggs, sugar, and a pinch of salt until smooth.
- Stir in the flour, sour cream, and drained crushed pineapple.
- Pour the filling evenly over the pre-baked crust.
- Add the Topping: Sprinkle the reserved crust mixture over the filling.
- Bake: Bake for 1 hour or until the topping is golden and the filling is set. Let cool for 15–20 minutes.
- Prepare the Icing:
- In a small bowl, whisk together powdered sugar, coconut extract, and half-and-half until smooth.
- Adjust consistency with more half-and-half if necessary.
- Finish and Serve: Drizzle the icing over the cooled bars. Slice into squares and serve.
