Pineapple Chicken and Rice: A Tropical Delight

Pineapple Chicken and Rice
A sweet and savory tropical dish.
Ingredients
- 1 pound boneless, skinless chicken breasts, thinly sliced
 - 1 tablespoon olive oil
 - 1/2 onion, chopped
 - 1 can (15 oz) pineapple chunks, drained
 - 1/4 cup soy sauce
 - 1/4 cup honey
 - 1/4 cup rice vinegar
 - 1 clove garlic, minced
 - 1/4 teaspoon red pepper flakes (optional)
 - 2 cups cooked rice
 
Instructions
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken and cook until browned. Remove from the skillet and set aside.
 - Sauté the Onion: In the same skillet, add the chopped onion and cook until softened.
 - Add the Pineapple and Sauce: Stir in the pineapple chunks, soy sauce, honey, rice vinegar, garlic, and red pepper flakes (if using). Let the mixture simmer for a few minutes.
 - Combine Everything: Return the cooked chicken to the skillet and toss to coat evenly. Cook for another few minutes until well combined.
 - Serve and Enjoy: Serve over cooked rice and enjoy!
 
Tips
- For a spicier dish, add more red pepper flakes.
 - Try adding bell peppers or cashews for extra crunch.
 - Serve with a side salad or steamed vegetables for a balanced meal.
