Ingredients

For the Cake:

  • 1 package (15.25 ounces) yellow cake mix
  • 3/4 cup vegetable oil
  • 3/4 cup pineapple juice
  • 4 large eggs, at room temperature

For the Pineapple Syrup:

  • 2 1/2 cups powdered sugar
  • 3/4 cup pineapple juice
  • 4 tablespoons butter, melted and warm

Instructions

Prepare the Cake:

  1. Preheat your oven to 350°F (175°C) and generously grease a standard bundt pan.
  2. In a large mixing bowl, combine the cake mix, vegetable oil, pineapple juice, and eggs. Mix until just combined.
  3. Pour the batter into the prepared bundt pan and bake for 28 to 32 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  4. Allow the cake to cool in the pan for 10 to 15 minutes before proceeding with the syrup.

Make the Pineapple Syrup:

  1. While the cake is cooling, whisk together the powdered sugar and pineapple juice in a medium bowl. Add the warm, melted butter and continue whisking until the mixture is completely smooth.

Assemble the Cake:

  1. While the cake is still in the pan, use a fork or skewer to poke holes all over the surface.
  2. Slowly pour about 3/4 of the pineapple syrup over the cake, allowing it to seep into the holes.
  3. Carefully invert the cake onto a serving platter and let it sit for an additional 15 minutes to absorb the syrup.
  4. Finally, drizzle the remaining syrup over the top of the cake before serving.

Enjoy the tropical flavors of this delightful Pineapple Juice Cake, a dessert that’s as beautiful to look at as it is delicious to eat!
