Instructions for Making Pineapple Quick Bread
- Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This ensures that it reaches the right temperature while you prepare the batter.
- Prepare the Dry Ingredients: In a medium-sized mixing bowl, sift together the all-purpose flour, salt, and baking powder. This step helps to distribute the ingredients evenly and removes any lumps.
- Cream the Butter and Sugar: In a separate bowl, combine the softened butter and granulated sugar. Beat them together until you achieve a smooth and creamy consistency.
- Incorporate the Eggs: Add the eggs to the butter and sugar mixture one at a time, mixing thoroughly after each addition to ensure they are well integrated.
- Combine Wet and Dry Ingredients: Gradually add the reserved ¼ cup of pineapple liquid and the sifted dry ingredients into the butter mixture, alternating between the two. Mix well to create a smooth batter.
- Add Milk and Pineapple: Stir in the milk until it’s fully combined. Then, gently fold in the crushed pineapple, making sure it’s evenly distributed throughout the batter.
- Transfer to Loaf Pan: Pour the batter into a greased loaf pan, spreading it out evenly to ensure even baking.
- Bake: Place the loaf pan in your preheated oven and bake for approximately 50-55 minutes. The bread is done when a skewer inserted into the center comes out clean.
- Cool the Bread: Allow the loaf to cool in the pan for about 10-15 minutes before transferring it to a cooling rack to finish cooling completely.
- Prepare the Glaze: In a small bowl, mix together the remaining pineapple liquid, confectioners’ sugar, and vanilla extract until smooth.
- Glaze the Bread: Once the loaf is completely cooled, drizzle the glaze over the top. Allow the glaze to set before slicing and serving.
This Pineapple Quick Bread is a delightful treat, perfect for breakfast or as a sweet snack. The combination of the moist bread with the sweet pineapple glaze creates a harmonious blend of flavors that everyone will enjoy.
