For the Topping

  • ½ cup brown sugar
  • 4 tablespoons unsalted butter, melted
  • Pineapple slices or tidbits, well drained
  • Maraschino cherries (halved if large)

For the Sugar Cookies

  • 2 ¾ cups all-purpose flour

In another bowl, cream butter and sugar until light and fluffy.
Add the egg and vanilla, mixing well.
  4. Gradually add the dry ingredients to the wet mixture until a soft dough forms.
Add milk if needed for dough softness.
  5. Scoop about two tablespoons of dough, flatten slightly, and place over the pineapple topping,
    covering it completely.

  7. Allow cookies to cool for 5 minutes, then carefully invert the pan onto a baking sheet to release
    the cookies.

Description

The cherry center adds a classic look and a burst of sweetness, making them both beautiful and delicious.

Tips

  • Drain pineapple thoroughly to prevent soggy cookies.
  • Do not let cookies cool completely before flipping.
  • Fresh pineapple can be used for extra flavor.
  • Using a muffin tin helps keep the topping in place.

Correction

  • If cookies stick to the pan, invert them while still warm.
  • If cookies spread too much, chill the dough for 20 minutes.
  • Add cinnamon or nutmeg to the topping for extra warmth.
  • Use a mini muffin tin and reduce bake time for smaller cookies.
