Quick and Easy Chicken Casserole Recipe

Ingredients:

  • 2 cups uncooked long grain white rice
  • 1 cup whole milk
  • 1 (10-ounce) can cream of mushroom soup
  • 2 tablespoons cream cheese, cut into small pieces
  • 2 cups low-sodium chicken broth
  • 1 packet French onion soup mix
  • 3 cups halved brown or white mushrooms
  • 1 teaspoon dried thyme
  • 2 pounds chicken tenders
  • 1 cup shredded Gruyere cheese
  • 2 tablespoons roughly chopped parsley

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a casserole dish, combine the rice, milk, cream of mushroom soup, cream cheese, chicken broth, French onion soup mix, mushrooms, and thyme. Stir well to ensure all ingredients are evenly mixed.
  3. Lay the chicken tenders on top of the rice mixture.
  4. Cover the dish tightly with foil and bake for 1 hour.
  5. After 1 hour, remove the foil and stir the mixture. Sprinkle the shredded Gruyere cheese over the top.
  6. Return the dish to the oven, uncovered, and bake for an additional 15 minutes, or until the cheese is golden brown.
  7. Garnish with chopped parsley before serving.

Pro Tip:

If the rice is still undercooked after the initial baking time, keep the dish covered with foil for an additional 15 minutes. The steam from the dish will continue to cook the rice, even after it has been removed from the oven.
