Ingredients
- 1 lb corned beef, chopped or shredded
- 2 cups sauerkraut, well drained
- 2 cups Swiss cheese, shredded
- 3 cups rye bread, cubed (or rye bread crumbs)
- 1 cup Thousand Island dressing
- 2 tablespoons melted butter
- 1 teaspoon caraway seeds (optional)
- Salt and black pepper, to taste

Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
- Spread half of the cubed rye bread evenly across the bottom of the dish.
- Layer the corned beef over the bread, followed by the sauerkraut.
- Drizzle half of the Thousand Island dressing evenly over the layers.
- Sprinkle half of the Swiss cheese on top.
- Repeat the layers with the remaining bread, dressing, and cheese.
- Drizzle melted butter over the top and sprinkle with caraway seeds if using.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake an additional 10–15 minutes, until the cheese is melted and bubbly.
- Let the casserole rest for 5 minutes before serving.
