Ingredients
For the sausages
- 1½ lbs (about 6 links) Italian sausage (sweet or hot)
- 2 tbsp olive oil (only if needed)
Vegetables
- 2 large onions, sliced
- 3 bell peppers (red, yellow, or green), sliced
- 3 cloves garlic, minced
Sauce
- ½ cup crushed tomatoes OR tomato sauce
- ½ cup chicken broth (or water)
- 1 tbsp tomato paste (optional)
- 1 tsp dried oregano
- ½ tsp dried basil
- Salt and pepper, to taste
- Pinch of red pepper flakes (optional)
Optional for serving
- Hoagie rolls or baguette
- Fresh parsley, chopped
- Provolone cheese slices
Instructions
- Sear the sausages: Heat a large skillet over medium-high heat. Add a bit of olive oil if needed and brown the sausages on all sides. Remove them from the pan.
- Cook the vegetables: Add the onions and peppers to the same skillet with a pinch of salt. Cook 8–10 minutes until softened. Add garlic and cook 1 minute.
- Build the sauce: Stir in crushed tomatoes, broth, tomato paste, oregano, basil, pepper flakes, salt, and pepper.
- Simmer with sausages: Return the sausages to the skillet. Cover and simmer 20–25 minutes on low.
- Finish & serve: Taste and adjust seasoning. Serve whole or sliced.
