Ingredients

For the sausages

  • 1½ lbs (about 6 links) Italian sausage (sweet or hot)

  • 3 bell peppers (red, yellow, or green), sliced
  • 3 cloves garlic, minced

Sauce

  • ½ cup crushed tomatoes OR tomato sauce
  • ½ cup chicken broth (or water)

  • ½ tsp dried basil
  • Salt and pepper, to taste
  • Pinch of red pepper flakes (optional)

Optional for serving

  • Hoagie rolls or baguette
  • Fresh parsley, chopped
  • Provolone cheese slices

Instructions

  1. Sear the sausages: Heat a large skillet over medium-high heat. Add a bit of olive oil if needed and brown the sausages on all sides. Remove them from the pan.
  2. Cook the vegetables: Add the onions and peppers to the same skillet with a pinch of salt. Cook 8–10 minutes until softened. Add garlic and cook 1 minute.
  3. Build the sauce: Stir in crushed tomatoes, broth, tomato paste, oregano, basil, pepper flakes, salt, and pepper.
  4. Simmer with sausages: Return the sausages to the skillet. Cover and simmer 20–25 minutes on low.
  5. Finish & serve: Taste and adjust seasoning. Serve whole or sliced.
