Introduction

  • 1 can diced tomatoes (14.5 oz / 411g)
  • 4 cups beef broth
  • 1 tbsp tomato paste (optional)
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1–2 tbsp olive oil (if needed)

Instructions

  1. Brown the Beef: In a large pot, cook the ground beef over medium heat until browned. Drain excess fat if needed.
  2. Add Aromatics: Add diced onions and garlic. Cook for 2–3 minutes until softened.
  3. Add Vegetables: Stir in potatoes, carrots, and celery.
  4. Add Liquids & Seasoning: Add beef broth, diced tomatoes, tomato paste, paprika, thyme, bay leaf, salt, and pepper.
  5. Simmer: Bring to a boil, then reduce heat to low. Cover and simmer 35–45 minutes, until vegetables are tender.
  6. Add Peas: Stir in frozen peas during the last 5 minutes.
  7. Taste & Adjust: Adjust seasoning as needed.
  8. Serve: Remove bay leaf and serve hot.
