Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste
  • 8 oz egg noodles
  • 1/2 cup whole milk or heavy cream (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Slow Cooker: Place the chopped onion and minced garlic in the bottom of the slow cooker. Lay the chicken on top and season with salt, pepper, thyme, and dried parsley.
  2. Add Broth and Soup: Pour the chicken broth and cream of chicken soup over the chicken. Stir gently to combine.
  3. Cook the Chicken: Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
  4. Shred the Chicken: Remove the chicken from the slow cooker, shred it using two forks, and return it to the pot.
  5. Add the Noodles: Stir in the egg noodles, making sure they are fully submerged in the liquid. Cover and cook on high for 30–40 minutes, or until the noodles are tender.
  6. Optional – Make It Creamy: For a richer, creamier texture, stir in the milk or heavy cream during the final minutes of cooking.
  7. Serve and Enjoy: Adjust seasoning to taste. Sprinkle with freshly chopped parsley and serve hot.
