- 1 tsp smoked paprika
- 1 tsp chili powder

- ½ tsp dried oregano
- ½ tsp onion powder
Instructions

- Layer the sliced potatoes at the bottom of the slow cooker.
- Spoon the cooked beef mixture over the potatoes.
- Add the kidney beans and corn evenly on top.
- Pour in the diced tomatoes (with juice) and beef broth.
- In a bowl, mix the cream of mushroom soup with chili powder, smoked paprika, oregano, onion powder, salt, and pepper.
- Spread the soup mixture evenly over the slow cooker ingredients.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
- Sprinkle cheddar cheese on top and let it melt for 10–15 minutes.
- Serve warm and enjoy a hearty, comforting cowboy-style casserole.
Description
This casserole is rustic, creamy, and incredibly satisfying. The potatoes absorb the rich beef broth
and savory mushroom sauce while the beans and corn add texture and sweetness. The melted cheese ties
everything together, giving you a wholesome, hearty meal with bold Southwestern-inspired flavors.
Tips
- Use lean beef to prevent excess grease.
- Add bell peppers for extra flavor and color.
- Swap kidney beans for black beans or pinto beans.
- Add jalapeños or chipotle powder for extra heat.
- Slice potatoes thinly to ensure even cooking.
- Pepper jack cheese makes a great spicy substitute for cheddar.
- Reduce broth to ½ cup if you prefer a thicker casserole.
Correction
If your casserole turns out too watery, it may be because the potatoes were too thick,
too much broth was added, or the lid was opened too often during cooking.
Fix: Cook uncovered on HIGH for 20 minutes, or stir in a cornstarch slurry
(1 tablespoon cornstarch + 2 tablespoons water) to thicken.
Enjoy
Serve your Slow Cooker Cowboy Casserole with warm cornbread, biscuits, or a fresh green salad.
Cozy, hearty, and delicious—this dish is sure to become a family favorite!
