Ingredients
For the Biscuits:
- 2 eggs
- 100 g (1/2 cup) sugar
- 80 ml (1/3 cup) sunflower oil
- Zest of 1 lemon
- 50 ml (3 tablespoons) lemon juice
- 380 g (3 cups) all-purpose flour
- 12 g (2 1/2 teaspoons) baking powder
For Dusting:
- 80 g (1/2 cup) powdered sugar
Directions
- Preheat the Oven: Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Prepare the Dough: In a large mixing bowl, whisk together the eggs and sugar until light and frothy. Add the sunflower oil, lemon zest, and lemon juice, mixing until well combined.
- Incorporate Dry Ingredients: Gradually add the all-purpose flour and baking powder into the wet mixture. Stir until a soft dough forms. The dough should be easy to handle and slightly sticky but not too wet.
- Shape the Biscuits: Using your hands, take a small portion of dough (about a tablespoon) and roll it into a ball. Repeat with the remaining dough, placing each ball onto the prepared baking sheet, leaving space between them.
- Dust with Powdered Sugar: Roll each dough ball in powdered sugar until evenly coated. This will give the biscuits their signature soft and sweet exterior.
- Bake: Bake the biscuits in the preheated oven for 12-15 minutes, or until they are lightly golden on the edges. The biscuits should still be soft in the center.
- Cool and Serve: Remove the biscuits from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
