Ingredients:
- 2 medium zucchini, sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley, for garnish
Instructions:
- Prepare the Zucchini: Wash the zucchini thoroughly and cut into 1/4-inch thick rounds. Lightly season both sides with salt and pepper.
- Pan-Fry the Zucchini: In a large skillet, heat the olive oil over medium heat. Add the zucchini slices in a single layer and cook for 2–3 minutes per side, or until golden brown and tender. You may need to work in batches to avoid overcrowding the pan.
- Add the Cheese: Once the zucchini is cooked, reduce the heat to low. Sprinkle mozzarella and Parmesan cheese evenly over the rounds. Cover the skillet with a lid and let the cheese melt for 1–2 minutes, until it becomes bubbly and gooey.
