These pan-fried zucchini rounds are golden and crispy on the outside, tender on the inside, and topped with a cheesy blend that adds a rich, savory touch. Ingredients:

  • 2 medium zucchini, sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions:

  1. Prepare the Zucchini: Wash the zucchini thoroughly and cut into 1/4-inch thick rounds. Lightly season both sides with salt and pepper.
  2. Pan-Fry the Zucchini: In a large skillet, heat the olive oil over medium heat. Add the zucchini slices in a single layer and cook for 2–3 minutes per side, or until golden brown and tender. You may need to work in batches to avoid overcrowding the pan.
  3. Add the Cheese: Once the zucchini is cooked, reduce the heat to low. Sprinkle mozzarella and Parmesan cheese evenly over the rounds. Cover the skillet with a lid and let the cheese melt for 1–2 minutes, until it becomes bubbly and gooey.
  4. Serve: Transfer the cheesy zucchini to a serving platter. Garnish with freshly chopped parsley and serve immediately while hot and melty.
