Stuffed Potato Cakes

Ingredients:

  • 4 large potatoes, peeled and boiled
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup cooked and diced meat (ham, bacon, or chicken)
  • 1/4 cup chopped green onions
  • 1/4 cup chopped parsley
  • 1/4 cup diced carrots (optional)
  • Salt and pepper, to taste
  • 1/4 cup flour
  • 1 egg, beaten
  • 2 tablespoons oil, for frying

Instructions:

  1. Prepare Potatoes: Mash the boiled potatoes until smooth, seasoning them with salt and pepper to taste.
  2. Mix Filling: In a separate bowl, combine the shredded cheese, diced meat, green onions, parsley, and diced carrots (if using).
  3. Form Patties: Take a portion of the mashed potatoes and flatten it into a patty. Place a spoonful of the filling mixture in the center.
  4. Seal and Shape: Fold the edges of the potato patty over the filling, shaping it into a ball. Gently flatten the ball to form a cake.
  5. Coat and Fry: Dredge each potato cake in flour, then dip in the beaten egg, and coat with flour again. Heat the oil in a frying pan over medium heat. Fry the potato cakes until golden brown on each side, approximately 3-4 minutes per side.
  6. Serve: Serve hot, garnished with additional chopped parsley or green onions.
