Sweet Amish Macaroni Salad
The Sweet Amish Macaroni Salad is a cherished dish that perfectly balances tender pasta, crisp vegetables, and a creamy, sweet-tangy dressing. It’s a timeless favorite at picnics, potlucks, and family gatherings, offering a comforting blend of flavors and textures that never fails to impress.
This recipe stands out for its simple preparation and make-ahead convenience. The combination of crunchy celery, colorful bell peppers, and the distinct sweetness from the dressing creates a nostalgic flavor reminiscent of traditional Amish cooking.
Ingredients
- 2 cups uncooked elbow macaroni
 - 3 large hard-boiled eggs, chopped
 - 3 stalks celery, chopped
 - 1 onion, chopped or diced
 - 2 tablespoons sweet pickle relish
 - 3 tablespoons yellow mustard
 - 1 small red bell pepper, chopped
 - 2 cups Miracle Whip salad dressing
 - ¾ cup white sugar
 - 2 ¼ teaspoons white vinegar
 - ½ teaspoon celery seed
 - Salt and pepper, to taste

Instructions
- Cook the Pasta: Prepare the elbow macaroni according to package directions until al dente. Drain thoroughly and rinse under cold water to stop the cooking process. Set aside to cool.
 - Mix the Vegetables: In a large mixing bowl, combine the chopped eggs, celery, onion, red bell pepper, and sweet pickle relish.
 - Make the Dressing: In a separate bowl, whisk together the Miracle Whip, yellow mustard, white vinegar, white sugar, and celery seed until smooth and the sugar is fully dissolved. Season with salt and pepper.
 - Combine with Vegetables: Pour the dressing over the mixed vegetables. Gently stir to coat evenly.
 - Add the Macaroni: Fold the cooled macaroni into the vegetable mixture, ensuring the pasta is thoroughly coated with the dressing.
 - Chill Before Serving: Cover and refrigerate for at least 1 hour before serving to let the flavors meld and the salad fully chill.

Serving Tip: This salad pairs beautifully with grilled meats, fried chicken, or as part of a summer buffet table.
