The Sweet Amish Macaroni Salad is a cherished dish that perfectly balances tender pasta, crisp vegetables, and a creamy, sweet-tangy dressing. It’s a timeless favorite at picnics, potlucks, and family gatherings, offering a comforting blend of flavors and textures that never fails to impress.

This recipe stands out for its simple preparation and make-ahead convenience. The combination of crunchy celery, colorful bell peppers, and the distinct sweetness from the dressing creates a nostalgic flavor reminiscent of traditional Amish cooking.

Ingredients

  • 2 cups uncooked elbow macaroni
  • 3 large hard-boiled eggs, chopped
  • 3 stalks celery, chopped
  • 1 onion, chopped or diced
  • 2 tablespoons sweet pickle relish
  • 3 tablespoons yellow mustard
  • 1 small red bell pepper, chopped
  • 2 cups Miracle Whip salad dressing
  • ¾ cup white sugar
  • 2 ¼ teaspoons white vinegar
  • ½ teaspoon celery seed
  • Salt and pepper, to taste

Instructions

  1. Cook the Pasta: Prepare the elbow macaroni according to package directions until al dente. Drain thoroughly and rinse under cold water to stop the cooking process. Set aside to cool.
  2. Mix the Vegetables: In a large mixing bowl, combine the chopped eggs, celery, onion, red bell pepper, and sweet pickle relish.
  3. Make the Dressing: In a separate bowl, whisk together the Miracle Whip, yellow mustard, white vinegar, white sugar, and celery seed until smooth and the sugar is fully dissolved. Season with salt and pepper.
  4. Combine with Vegetables: Pour the dressing over the mixed vegetables. Gently stir to coat evenly.
  5. Add the Macaroni: Fold the cooled macaroni into the vegetable mixture, ensuring the pasta is thoroughly coated with the dressing.
  6. Chill Before Serving: Cover and refrigerate for at least 1 hour before serving to let the flavors meld and the salad fully chill.
Serving Tip: This salad pairs beautifully with grilled meats, fried chicken, or as part of a summer buffet table.
