Ingredients:

  • 4 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup cornstarch
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup ketchup
  • 1/2 cup apple cider vinegar
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 1/2 tsp sea salt

Instructions:

  1. Preheat the Oven
Preheat your oven to 325°F (160°C). Line a 13 x 9-inch baking pan with parchment paper and set it aside.
  2. Prepare the Chicken
Season the chicken pieces with salt and pepper. In a large Ziploc bag, add the cornstarch, then add the chicken pieces. Shake the bag until the chicken is evenly coated with the cornstarch.
  3. Cook the Chicken
In a shallow bowl, beat the eggs. Heat the vegetable oil in a skillet over medium-high heat until it begins to sizzle. Dip each piece of chicken into the beaten eggs, ensuring it’s well-coated. Transfer the coated chicken to the skillet and sear until the pieces are golden brown on all sides. Once seared, place the chicken pieces in the prepared baking pan.
  4. Prepare the Sweet and Sour Sauce
In a medium bowl, whisk together the sugar, ketchup, apple cider vinegar, soy sauce, garlic powder, and sea salt. Make sure the ingredients are thoroughly combined to create a smooth, flavorful sauce.
  5. Bake the Chicken
Pour the prepared sauce evenly over the chicken pieces in the baking pan. Bake the chicken in the preheated oven for 1 hour, turning and tossing the chicken halfway through to ensure even cooking and coating with the sauce.
  6. Serve
Once the chicken is done baking, remove it from the oven and serve immediately. This dish pairs perfectly with steamed rice or a side of stir-fried vegetables.

Enjoy! This sweet and sour chicken dish brings together the flavors of savory chicken and a tangy, rich sauce. Whether it’s for a weeknight dinner or a special occasion, this recipe will be a crowd-pleaser.
