Taco Potatoes Recipe

Ingredients:

  • 1 pound lean ground beef
  • 4 to 6 medium Russet potatoes
  • 1 packet (1 ounce) taco seasoning
  • ½ cup water
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • ½ cup diced tomatoes

Instructions:

  1. Prepare the Potatoes: Preheat your oven to 400°F (200°C). Wash and scrub the potatoes thoroughly, then pierce them several times with a fork. Bake for 45-50 minutes, or until they are tender when pierced with a fork.
  2. Cook the Beef: While the potatoes are baking, heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease.
  3. Add Seasoning: Stir in the taco seasoning and ½ cup of water. Allow the mixture to simmer for about 5 minutes until the sauce thickens and coats the beef evenly.
  4. Assemble the Taco Potatoes: Once the potatoes are fully baked, carefully slice them open and fluff the insides with a fork. Spoon the seasoned taco beef generously over each potato.
  5. Add Toppings & Serve: Sprinkle shredded cheddar cheese over the beef, allowing it to melt slightly. Add a dollop of sour cream, followed by chopped green onions and diced tomatoes.
  6. Enjoy! Serve these flavorful, cheesy taco potatoes while they’re warm. They make a fantastic meal for any occasion!
