Taco Potatoes Recipe

Ingredients:
- 1 pound lean ground beef
- 4 to 6 medium Russet potatoes
- 1 packet (1 ounce) taco seasoning
- ½ cup water
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ¼ cup chopped green onions
- ½ cup diced tomatoes
Instructions:
- Prepare the Potatoes: Preheat your oven to 400°F (200°C). Wash and scrub the potatoes thoroughly, then pierce them several times with a fork. Bake for 45-50 minutes, or until they are tender when pierced with a fork.
- Cook the Beef: While the potatoes are baking, heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease.
- Add Seasoning: Stir in the taco seasoning and ½ cup of water. Allow the mixture to simmer for about 5 minutes until the sauce thickens and coats the beef evenly.
- Assemble the Taco Potatoes: Once the potatoes are fully baked, carefully slice them open and fluff the insides with a fork. Spoon the seasoned taco beef generously over each potato.
- Add Toppings & Serve: Sprinkle shredded cheddar cheese over the beef, allowing it to melt slightly. Add a dollop of sour cream, followed by chopped green onions and diced tomatoes.
