Ingredients:

  • 4 to 6 medium Russet potatoes
  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning
  • ½ cup water
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream (optional)
  • ¼ cup chopped green onions
  • ½ cup diced tomatoes
  • ¼ cup sliced black olives (optional)

Instructions:

1. Bake the Potatoes

Preheat your oven to 400°F (200°C). Scrub the potatoes thoroughly, then pierce them with a fork to allow steam to escape. Place them directly on the oven rack and bake for 45-50 minutes until they are tender. If you’re short on time, you can microwave the potatoes for 8-10 minutes, flipping them halfway through.

2. Cook the Beef

While the potatoes are baking, heat a skillet over medium heat. Add the ground beef and cook until fully browned, breaking it apart with a spoon. Drain any excess grease to prevent the dish from becoming too oily.

3. Season the Meat

Stir in the taco seasoning and ½ cup of water. Simmer the mixture for about 5 minutes, stirring occasionally, until it thickens. Remove from heat.

4. Assemble the Taco Potatoes

Once the potatoes are cooked, slice them open lengthwise and gently fluff the insides with a fork. Spoon the seasoned taco beef evenly over each potato.

5. Add Toppings

Sprinkle shredded cheddar cheese over the hot taco beef, allowing it to melt. Then, add your preferred toppings, such as sour cream, diced tomatoes, chopped green onions, and sliced black olives.
