The Ultimate Refrigerator Pickles: A Must-Try Recipe

This recipe is a keeper, and the best part? These pickles can last in your fridge for up to two months. Here’s how to make them:

Ingredients:

  • 4 cucumbers, sliced thinly
  • 1 red onion, sliced into large pieces
  • 1 green bell pepper, sliced into large pieces
  • 1 tablespoon of salt
  • 2 cups of white vinegar
  • 1 and a half cups of sugar
  • 1 teaspoon of celery flakes
  • 1 teaspoon of red pepper flakes

Instructions:

  1. Prepare the Vegetables:

Combine the sliced cucumbers, onions, and bell pepper in a bowl. Sprinkle with salt and set aside.

  2. Make the Brine:

In a saucepan, combine the white vinegar, sugar, celery flakes, and red pepper flakes. Bring the mixture to a boil, stirring until the sugar is fully dissolved.

  3. Cool the Brine:

Remove the saucepan from the heat and add two handfuls of ice, allowing them to melt and cool the brine.

  4. Pack the Jars:

Transfer the vegetable mixture into two large-mouth canning jars (either two quart-sized jars or one half-gallon jar). Pour the cooled vinegar mixture over the vegetables, ensuring they are fully submerged.

  5. Seal and Store:

Seal the jars tightly with lids and refrigerate.

Your homemade pickles will be ready to enjoy after a few hours of refrigeration, and they can be stored for up to two months. Enjoy these crisp, tangy pickles as a side dish, snack, or topping on your favorite sandwiches.
