Toffee Butterscotch Cake
Ingredients
For the Cake:
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch of salt
For the Toffee Butterscotch Sauce:
- 1 cup brown sugar
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- Pinch of salt
Directions
Preparing the Cake Batter:
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, sift together the flour, baking powder, baking soda, and a pinch of salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Start with the dry ingredients, then add buttermilk, and continue alternating until combined. Do not overmix.
