Instructions

  1. Brown the beef: Heat olive oil in a large pot over medium-high heat.
    Add the beef chunks and cook until browned on all sides. Remove and set aside.
  2. Sauté the aromatics: In the same pot, add diced onion and cook until softened.
    Add minced garlic and cook for 30 seconds.
  3. Add vegetables and beef: Add carrots, celery, potatoes, and green beans.
    Return the browned beef to the pot.
  4. Add broth: Pour in the beef broth and add diced tomatoes, bay leaf, thyme, parsley,
    salt, and pepper. Stir well.
  5. Simmer: Bring to a boil, reduce heat to low, cover, and simmer for 1 to 1½ hours
    until beef is tender.
  6. Add final vegetables: Stir in corn and peas if using. Simmer for an additional
    10 minutes.
  7. Adjust seasoning: Taste and adjust the seasoning as needed.
    Remove bay leaf before serving.
