Instructions

    Place the tin in the oven until the fat is very hot and almost smoking.
  3. Add the batter:
    Carefully remove the hot pan from the oven. Quickly pour the batter into each cup, filling them about halfway.
  4. Bake:
    Return the pan to the oven and bake for 20–25 minutes, or until the puddings are well-risen,
    golden brown, and crisp around the edges.
  5. Serve immediately:
    Remove from the oven and serve right away for the best texture and flavor.
