Chocolate Chip Muffins Recipe
Ingredients:
- ½ cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ½ cup milk
- 1 cup semi-sweet chocolate chips
Method:
- Prepare the Muffin Tin:
- Line a muffin tin with paper liners.
- Lightly grease the paper liners with nonstick cooking spray.
- Mix the Batter:
- In a large mixing bowl, use a hand mixer to cream together the butter and sugar until light and fluffy, about two minutes.
- Beat in the eggs one at a time until well combined.
- Add the baking powder, salt, and vanilla extract, and mix briefly until incorporated.
- Combine Dry and Wet Ingredients:
- Add half of the flour to the butter mixture and mix with a hand mixer until just combined.
- Pour in the milk and stir until well combined.
- Scrape the sides and bottom of the bowl to ensure everything is well mixed.
- Add the remaining flour and mix until just combined.
- Add Chocolate Chips:
- Gently fold in the chocolate chips using a rubber spatula.
- Fill the Muffin Tin:
- Divide the batter evenly among the 12 muffin cups.
- Bake:
- Preheat the oven to 425°F (220°C). While the oven is preheating, let the batter rest.
- Bake the muffins in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
- After 7 minutes of baking, reduce the oven temperature to 350°F (175°C). Keep an eye on the muffins, as baking times may vary depending on your oven.
- Cool:
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
