Chocolate Chip Muffins Recipe

Ingredients:

  • ½ cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ cup milk
  • 1 cup semi-sweet chocolate chips

Method:

  1. Prepare the Muffin Tin:
    • Line a muffin tin with paper liners.
    • Lightly grease the paper liners with nonstick cooking spray.
  2. Mix the Batter:
    • In a large mixing bowl, use a hand mixer to cream together the butter and sugar until light and fluffy, about two minutes.
    • Beat in the eggs one at a time until well combined.
    • Add the baking powder, salt, and vanilla extract, and mix briefly until incorporated.
  3. Combine Dry and Wet Ingredients:
    • Add half of the flour to the butter mixture and mix with a hand mixer until just combined.
    • Pour in the milk and stir until well combined.
    • Scrape the sides and bottom of the bowl to ensure everything is well mixed.
    • Add the remaining flour and mix until just combined.
  4. Add Chocolate Chips:
    • Gently fold in the chocolate chips using a rubber spatula.
  5. Fill the Muffin Tin:
    • Divide the batter evenly among the 12 muffin cups.
  6. Bake:
    • Preheat the oven to 425°F (220°C). While the oven is preheating, let the batter rest.
    • Bake the muffins in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
    • After 7 minutes of baking, reduce the oven temperature to 350°F (175°C). Keep an eye on the muffins, as baking times may vary depending on your oven.
  7. Cool:
    • Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
