Perfect Rib Steak Recipe
Ingredients:
- 1 rib steak
- Sea salt flakes
- Freshly ground black pepper
- 50g butter
- 2 sprigs of thyme
- 1 clove of garlic, crushed with its skin
Directions:
- Remove the steak from the refrigerator at least 30 minutes before cooking to bring it to room temperature. This step ensures even cooking.
- Season the steak generously with sea salt flakes and freshly ground black pepper on both sides, ensuring an even coverage.
- Heat a frying pan over medium-high heat. If cooking two steaks, use a pan large enough to accommodate them comfortably, or use two pans simultaneously.
- Add the steak to the hot skillet and cook for 2 to 3 minutes on each side, depending on thickness and desired doneness. For a 3cm thick steak, aim for around 5 minutes total. For precision, use a meat thermometer: 50°C for rare, 60°C for medium, and 70°C for well-done.
- After flipping the steak, add the butter, thyme, and garlic to the pan. Tilt the pan towards you to collect the butter at the bottom, then use a spoon to continuously baste the steak with the melted butter for about one minute.
- Remove the steak from the skillet and let it rest for 5 minutes. This step is crucial as it allows the meat fibers to relax and reabsorb their juices, preventing them from running out when sliced.
- Slice the steak into strips, season to taste, and serve with your choice of side dishes and sauce.
