Chocolate Rice Krispie Balls Recipe

Chocolate Rice Krispie Balls

Ingredients:

  • ½ cup peanut butter
  • 3 tablespoons soft butter
  • 1 teaspoon vanilla extract
  • 1 cup Rice Krispies
  • ½ cup chopped pecans
  • 1 cup shredded coconut

Instructions:

  1. In a mixing bowl, combine the peanut butter, soft butter, vanilla extract, Rice Krispies, chopped pecans, and shredded coconut. Mix well until all ingredients are thoroughly incorporated.
  2. Refrigerate the mixture for at least half an hour or until firm enough to handle.
  3. Once chilled, form the mixture into small balls and place them on a tray. Return the tray to the refrigerator and let the balls chill for at least an hour.
  4. Meanwhile, melt the following ingredients together in a double boiler:
    • 1 package of chocolate chips
    • 1 square of sweet chocolate
  5. Keep the heat on low to ensure the chocolate remains soft and melted.
  6. Using a fork, dip each ball into the melted chocolate, rolling it to ensure it is fully coated. Place the chocolate-covered balls on a sheet of parchment paper.
  7. Allow the chocolate to set by placing the balls back in the refrigerator.
  8. Once set, the Chocolate Rice Krispie Balls are ready to serve. They can also be frozen for later enjoyment.
