Broccoli Cheese Patties
Ingredients:
- 2 cups of steamed broccoli florets, finely chopped
- 1 cup of grated cheddar cheese
- 1/2 cup of low-carb breadcrumbs
- 2 eggs, beaten
- 2 tablespoons of grated Parmesan cheese
- 2 cloves of garlic, minced
- 1/4 teaspoon of onion powder
- Salt and pepper to taste
- Olive oil for frying
Preparation:
- In a large mixing bowl, combine the chopped broccoli, cheddar cheese, breadcrumbs, beaten eggs, Parmesan cheese, minced garlic, onion powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
- Heat a small amount of olive oil in a large skillet over medium heat.
- Using your hands, shape the broccoli mixture into small patties, ensuring they hold together well. Repeat with the remaining mixture.
- Place the patties in the skillet, leaving space between them, and cook for about 3-4 minutes on each side, or until they are golden brown and crispy.
- Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil.
Serve these broccoli cheese patties warm as a tasty appetizer, a flavorful side dish, or a delightful vegetarian burger alternative.
