Tomato, Cucumber, and Onion Salad with Olive Oil Marinade


Ingredients:

  • 2 large cucumbers, thinly sliced
  • 1 large red onion, thinly sliced
  • 3 large tomatoes, sliced or cut into wedges
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar or red wine vinegar
  • 2 teaspoons sugar (optional, for a touch of sweetness)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder (optional)
  • Fresh parsley or basil for garnish (optional)

Preparation:

  1. Prepare the Vegetables: Begin by thinly slicing the cucumbers and red onion. Cut the tomatoes into slices or wedges as preferred.
  2. Make the Marinade: In a small bowl, whisk together the olive oil, vinegar (apple cider or red wine), sugar (if using), salt, pepper, dried oregano, dried basil, and garlic powder (if using).
  3. Combine and Marinate: In a large mixing bowl, combine the sliced cucumbers, onions, and tomatoes. Pour the marinade over the vegetables, and gently toss to ensure they are evenly coated.
  4. Refrigerate: Cover the bowl and refrigerate for at least one hour to allow the flavors to meld. For best results, marinate for several hours or overnight.
