Tomato, Cucumber, and Onion Salad with Olive Oil Marinade
Ingredients:
- 2 large cucumbers, thinly sliced
- 1 large red onion, thinly sliced
- 3 large tomatoes, sliced or cut into wedges
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar or red wine vinegar
- 2 teaspoons sugar (optional, for a touch of sweetness)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder (optional)
- Fresh parsley or basil for garnish (optional)
Preparation:
- Prepare the Vegetables: Begin by thinly slicing the cucumbers and red onion. Cut the tomatoes into slices or wedges as preferred.
- Make the Marinade: In a small bowl, whisk together the olive oil, vinegar (apple cider or red wine), sugar (if using), salt, pepper, dried oregano, dried basil, and garlic powder (if using).
- Combine and Marinate: In a large mixing bowl, combine the sliced cucumbers, onions, and tomatoes. Pour the marinade over the vegetables, and gently toss to ensure they are evenly coated.
