Indulge in the ultimate potluck favorite with our Dorito Taco Salad. This vibrant dish combines perfectly seasoned ground beef, fresh vegetables, hearty beans, and crunchy Doritos, all brought together by a tangy Catalina dressing. It’s a guaranteed crowd-pleaser that always earns glowing reviews.

Ingredients:

  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • ⅔ cup water
  • 1 head iceberg lettuce, chopped into bite-sized pieces
  • 1 red or orange bell pepper, chopped
  • 1 green bell pepper, chopped
  • ½ cup sliced black olives
  • 1 can pinto beans, rinsed and drained
  • 1 cup diced tomatoes
  • ¼ cup thinly sliced green onions (reserve some for garnish)
  • 1 cup shredded cheddar cheese
  • 10 ounces Nacho-flavored Doritos
  • 16 ounces Catalina salad dressing
  • Sour cream (optional, for garnish)

Instructions:

  1. Cook the ground beef in a skillet over medium heat until fully browned, ensuring no pink remains. Drain any excess fat.
  2. Add the taco seasoning and water to the beef. Simmer the mixture for about 5 minutes, or until it thickens. Remove from heat and allow it to cool.
  3. In a large serving bowl, combine the chopped lettuce, bell peppers, black olives, pinto beans, diced tomatoes, shredded cheddar, and green onions.
  4. Once cooled, add the seasoned ground beef to the salad.
  5. Lightly crush the Doritos and sprinkle them over the salad.
  6. Drizzle the Catalina dressing over the top and gently toss the salad to ensure even coating.
  7. If desired, garnish with sour cream and additional green onions before serving.

Notes:

To maintain the crispiness of the Doritos, toss the salad just before serving.
