Healthy Pickled Beets Recipe
Ingredients:
- 8 medium fresh beets
 - 1 cup vinegar
 - 1/2 cup sugar
 - 1 1/2 teaspoons whole cloves
 - 1 1/2 teaspoons whole allspice
 - 1/2 teaspoon salt
 
Instructions:
- Scrub the beets thoroughly and trim the tops to 1 inch. Place the beets in a pot and cover them with water. Bring to a boil, then reduce the heat, cover, and simmer until the beets are tender, approximately 25 to 30 minutes.
 - Remove the beets from the water and let them cool. Once cooled, peel and slice the beets, then transfer them to a bowl and set aside.
 - In a small saucepan, combine vinegar, sugar, cloves, allspice, and salt. Bring the mixture to a boil and let it cook for 5 minutes.
 - Pour the hot vinegar mixture over the sliced beets. Refrigerate for at least 1 hour before serving. Drain the beets before serving.
