Creamy Sausage and Potato Soup: A Comforting Classic
Ingredients:
- 500 g (1 lb) ground sausage
- 4 medium potatoes, thinly sliced
- 1 medium onion, finely diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups kale, chopped
- 1 red bell pepper, diced
- Salt and pepper to taste
- 1 teaspoon crushed red pepper flakes (optional)
- 2 tablespoons olive oil
Instructions:
- Brown the Sausage: Heat the olive oil in a large pot over medium heat. Add the ground sausage and cook until it’s fully browned, breaking it into small pieces as it cooks. Once done, remove the sausage from the pot and set it aside.
- Sauté the Vegetables: Using the same pot, add the diced onion, red bell pepper, and minced garlic. Sauté the mixture for about 3-4 minutes, until the onion turns translucent and fragrant.
- Add Potatoes and Broth: Introduce the thinly sliced potatoes into the pot. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for 10-15 minutes, or until the potatoes become tender.
- Incorporate the Cream and Sausage: Stir in the heavy cream and reintroduce the cooked sausage to the pot. Mix everything thoroughly and let it simmer for an additional 5 minutes.
- Add the Kale: Add the chopped kale to the soup and cook for another 2-3 minutes until the kale wilts and integrates into the soup.
- Season and Serve: Season the soup with salt, pepper, and crushed red pepper flakes to taste. Serve it hot, accompanied by crusty bread or enjoyed on its own.
