Ingredients
Chicken
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Filling
- ½ cup chopped broccoli
- 2 oz cream cheese, softened
- ½ cup shredded cheese (a mix of cheddar and mozzarella)
- ¾ teaspoon ranch seasoning
Instructions
- Prepare the Chicken
Pat the chicken breasts dry with a paper towel. Flatten each breast slightly with a mallet. Use a sharp knife to butterfly each breast, creating a pocket for the filling. - Season the Chicken
In a small bowl, combine the paprika, garlic powder, salt, and black pepper with the olive oil. Rub this mixture over the outside of each chicken breast. - Prepare the Filling
In another bowl, mix the chopped broccoli, softened cream cheese, shredded cheese, and ranch seasoning. - Stuff the Chicken
Spoon the broccoli and cheese filling into each chicken breast. Use toothpicks to secure the edges of the chicken, preventing the filling from spilling out during cooking. (Some cheese may melt and ooze out, which is normal.) - Cook in the Air Fryer
Preheat the air fryer to 375˚F (190˚C). Place the stuffed chicken breasts in the air fryer basket, ensuring they are not crowded. Air fry for 15 minutes or until the internal temperature of the chicken reaches 165˚F (74˚C) as checked with a meat thermometer. - Serve
Carefully remove the chicken from the air fryer, discard toothpicks, and serve with your favorite side dish.
Notes
- Frozen Stuffed Chicken: If cooking from frozen, air fry at 380˚F (193˚C) for 20 minutes or until fully cooked.
- Storage: Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. Reheat in the air fryer until warmed through.
- Freezing Tips:
- For raw stuffed chicken breasts: Wrap each breast individually in cling film and freeze for up to 3 months.
- For cooked chicken breasts: Place them in a freezer bag and freeze for up to 3 months.
