Description
This meatloaf is smoky, cheesy, and packed with bold BBQ flavor. The bacon adds crunch and saltiness, while the cheddar melts into the beef for a gooey, burger-like bite. The BBQ glaze caramelizes on top, giving it a sticky, flavorful crust.
Tips
- Use 80/20 beef for juiciness (lean beef can dry out).
- Let it rest before slicing to keep it from falling apart.
- Cook bacon until crisp for best texture.
- Add a small pan of water in the oven to keep moisture in.
- Use a meat thermometer for perfect doneness.
Variations
- Spicy version: Add jalapeños or hot sauce.
- Cheese burst: Stuff the center with extra cheddar or mozzarella.
- Turkey version: Use ground turkey for a lighter option.
- Bacon wrap: Wrap the entire loaf in bacon strips.
- Double BBQ: Mix BBQ sauce inside and glaze twice during baking.
Common Corrections
- Don’t overmix the meat or it becomes dense.
- Don’t skip resting time or juices will run out.
- Avoid too much BBQ sauce in the mix—it can make it soggy.
- Ensure bacon is pre-cooked so it crisps properly.
- Check internal temperature instead of relying on time only.
Enjoy!
