Almond Walnut Cranberry Nougat

This Almond Walnut Cranberry Nougat is a delightful treat that combines the rich flavors of nuts with the tangy sweetness of cranberries. Each bite offers a satisfying mix of textures and tastes that will leave you craving more.

Ingredients:

  • 100 grams almonds
  • 75 grams walnuts
  • 75 grams dried cranberries
  • 125 grams sugar
  • 125 grams honey
  • 1 egg white

Instructions:

1. Prepare Almonds:

Place almonds in a small pot and cover with hot water. Cook for 3 minutes.
Remove from heat and drain the almonds using a strainer. Let them cool slightly, then remove the skins.
Toast the peeled almonds in a pan over low to medium heat for 5-8 minutes, stirring occasionally. Be careful not to over-toast. Set aside.

2. Toast Walnuts:

Toast walnuts in a pan over low to medium heat for about 5 minutes, stirring occasionally. Avoid over-toasting. Combine with the toasted almonds and let them cool.

3. Prepare Syrup:

In a small pot, heat sugar and honey over medium heat, stirring constantly until the sugar completely dissolves and the mixture starts to bubble.
Grease a mold with oil and lightly dust with icing sugar. Set aside.

4. Whip Egg Whites:

In a large bowl, separate the egg white from the yolk. Using an electric mixer, beat the egg white until stiff peaks form.

5. Combine Syrup and Egg Whites:

Once the syrup reaches a temperature between 120°C – 130°C (248°F – 266°F) or forms a solid ball when dropped into cold water, remove from heat and let it cool for about 3 minutes.
Gradually pour the syrup into the whipped egg white while stirring with a spatula. Switch to a whisk and continue mixing until fully incorporated.

6. Cook the Mixture:

Return the mixture to low heat, stirring constantly until it thickens and becomes shiny, approximately 8-10 minutes.

7. Mix in Nuts and Cranberries:

Remove from heat and fold in the toasted almonds, walnuts, and dried cranberries until evenly distributed.

8. Set Nougat:

Transfer the mixture into the prepared mold and smooth the top with a spatula. Allow the nougat to cool at room temperature for a few hours until it hardens.

9. Slice and Serve:

Once hardened, remove the nougat from the mold and cut into rectangular pieces.
