Amish Cinnamon Bread
Ingredients
For the Batter:
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 2 large eggs
- 2 cups buttermilk (or homemade buttermilk: 2 cups milk plus 2 tablespoons vinegar or lemon juice)
- 4 cups all-purpose flour
- 2 teaspoons baking soda
For the Cinnamon Sugar Mixture:
- 2/3 cup granulated sugar
- 2 teaspoons ground cinnamon
Instructions
- Prepare the Batter: In a large mixing bowl, cream together the softened butter and 2 cups of sugar until light and fluffy. Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Gradually mix in the buttermilk. In a separate bowl, whisk together the flour and baking soda. Slowly add the dry ingredients to the butter mixture, mixing until just combined.
- Prepare the Cinnamon Sugar Mixture: In a small bowl, combine the 2/3 cup of sugar with the cinnamon. Mix well.
- Assemble the Loaves: Divide the batter evenly between two greased loaf pans, placing roughly half of the batter in each pan. Sprinkle about 3/4 of the cinnamon sugar mixture over the batter in each pan. Carefully spread the remaining batter over the cinnamon sugar layer. Top with the remaining cinnamon sugar mixture and use a knife to gently swirl it into the batter.
- Bake: Preheat your oven to 350°F (175°C). Bake for 45-50 minutes, or until a toothpick inserted into the center of the loaves comes out clean.
- Cool and Serve: Allow the bread to cool in the pans for 20 minutes before transferring to a wire rack to cool completely.
