Baked Salmon in Foil with Asparagus and Garlic Lemon Butter Sauce
Ingredients
- 4 skinless salmon fillets
- 1 pound (454 grams) asparagus tips
- 1/3 cup (75 grams) melted butter
- 1/3 cup (125 ml) lemon juice
- 4 cloves garlic, minced
- 2 teaspoons (10 ml) fresh parsley, chopped
- Salt and pepper, to taste
- 2/3 cup (65 grams) freshly grated Parmesan cheese
- Parsley and lemon wedges, for garnish
Preparation
- Preheat the Oven: Set your oven to 400°F (200°C).
- Prepare the Foil Packets: Place each salmon fillet in the center of a 12”x18” (30×45 cm) sheet of aluminum foil. Divide the asparagus evenly into four portions and arrange them around each salmon fillet.
- Make the Sauce: In a bowl, mix together the melted butter, lemon juice, minced garlic, and chopped parsley.
- Season and Assemble: Drizzle the butter mixture over the salmon and asparagus. Season with salt and pepper to taste. Sprinkle each portion with 2 to 3 tablespoons of grated Parmesan cheese.
- Seal the Foil Packets: Fold the aluminum foil over the salmon and asparagus, sealing the edges tightly to create a packet.
- Bake: Place the foil packets on a baking sheet and bake in the preheated oven for about 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Garnish and Serve: Carefully open the foil packets and transfer the salmon and asparagus to plates. Garnish with additional parsley and lemon wedges.
