Ingredients

For the Steak Bites:

  • 1 lb (450g) sirloin steak, cut into bite-sized pieces
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, finely minced
  • 1 tablespoon fresh thyme leaves, chopped (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary leaves, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh parsley, finely chopped (optional)
  • 1 tablespoon olive oil

For the Mashed Potatoes:

  • 2 lbs (900g) potatoes, peeled and cubed
  • 1/2 cup whole milk (or heavy cream for a richer texture)
  • 4 tablespoons unsalted butter
  • Salt and freshly ground black pepper, to taste
  • Fresh chives, finely chopped (for garnish, optional)

Preparation

For the Mashed Potatoes:

  1. Cook the Potatoes: Place the cubed potatoes in a large pot and cover them with water. Add a pinch of salt and bring to a boil over medium-high heat. Cook until the potatoes are fork-tender, approximately 15-20 minutes.
  2. Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Add the butter and milk, then mash until smooth and creamy. Season with salt and pepper to your liking. Keep the mashed potatoes warm until ready to serve.

For the Steak Bites:

  1. Season the Steak: Generously season the steak bites with salt and freshly ground black pepper.
  2. Sear the Steak: In a large skillet, heat the olive oil over high heat. Arrange the steak bites in a single layer (work in batches if necessary) and sear each side for about 2-3 minutes until well-browned and cooked to your preferred level of doneness. Once done, transfer the steak bites to a plate and set aside.
  3. Prepare the Garlic Butter Sauce: Lower the heat to medium and add 2 tablespoons of butter to the same skillet. Once melted, add the minced garlic, thyme, and rosemary. Stir frequently until the garlic is fragrant and just beginning to turn golden, about 1-2 minutes.
  4. Coat the Steak in Sauce: Return the seared steak bites to the skillet and toss them in the garlic butter sauce until they are well-coated. Cook for an additional 1-2 minutes to heat through, then remove the skillet from the heat. Stir in the remaining 2 tablespoons of butter until fully melted into the sauce.

To Serve:

  1. Plate the Dish: Arrange the warm mashed potatoes on serving plates and top with the buttered steak bites. Drizzle any leftover garlic butter sauce from the skillet over the top for added flavor.
  2. Garnish: Finish with a sprinkle of fresh parsley and chives, if desired.

Enjoy your delicious buttered beef steak with creamy mashed potatoes!
