Chili Parlor Chili
Ingredients:
- 1 tablespoon olive oil
- 1 lb ground beef (preferably 90/10 or 80/20)
- 2 cups beef or chicken broth
- 1/2 cup tomato sauce or puree
- 1 tablespoon chili powder
- 1 tablespoon unsweetened cocoa powder
- 2 teaspoons Worcestershire sauce
- 2 teaspoons chili flakes
- 2 teaspoons paprika
- 2 teaspoons soy sauce
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- Kosher salt and freshly ground black pepper, to taste
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the ground beef, breaking it up with a spoon or spatula. Cook for 3 to 5 minutes until most of the pink is gone.
- Stir in the broth, tomato sauce, chili powder, cocoa powder, Worcestershire sauce, chili flakes, paprika, soy sauce, onion powder, garlic powder, and cayenne pepper.
- Bring the mixture to a simmer, then reduce the heat. Cover the pot and cook for 35 to 40 minutes, stirring frequently to prevent sticking.
- Season with kosher salt and freshly ground black pepper to taste. Serve and enjoy.
