Chocolate Rice Krispie Balls
Ingredients:
- ½ cup peanut butter
- 3 tablespoons soft butter
- 1 teaspoon vanilla extract
- 1 cup Rice Krispies
- ½ cup chopped pecans
- 1 cup shredded coconut
Instructions:
- In a mixing bowl, combine the peanut butter, soft butter, vanilla extract, Rice Krispies, chopped pecans, and shredded coconut. Mix well until all ingredients are thoroughly incorporated.
- Refrigerate the mixture for at least half an hour or until firm enough to handle.
- Once chilled, form the mixture into small balls and place them on a tray. Return the tray to the refrigerator and let the balls chill for at least an hour.
- Meanwhile, melt the following ingredients together in a double boiler:
- 1 package of chocolate chips
- 1 square of sweet chocolate
- Keep the heat on low to ensure the chocolate remains soft and melted.
- Using a fork, dip each ball into the melted chocolate, rolling it to ensure it is fully coated. Place the chocolate-covered balls on a sheet of parchment paper.
- Allow the chocolate to set by placing the balls back in the refrigerator.
- Once set, the Chocolate Rice Krispie Balls are ready to serve. They can also be frozen for later enjoyment.
